The hostelry “Le Castellas”, a 17th century residence, is located on a small street at the heart of the village of Collias, an old village of the Provence. Several old houses perfectly restored houses form an enclosure organized around an interior patio.

Here, the wisteria covered terrace is the ideal spot for having breakfast in the morning light, while in the evening, in the velvet atmosphere of subdued lights, you can savour the cuisine of our chef, full of colour, flavour and fragrance. The country inn “Le Castellas” is a place of dreams where life is pleasant, an ideal place of inspiration for artists, painters, and sculptors. This little universe thrills the heart even more when Chantal and Raymond Aparis receive you as friends with warmth and smiles. The desire for a nice, cool little aniseed aperitif will be quickly satisfied at our bar overhanging the garden; our personnel is professional and discrete, and will always serve you immediately.

The rooms will amaze you – they each have their own personality: art deco, art nouveau, the 70s – and they blend in a hymn of imagination and originality. From relaxing corners of unusual detail, let the charm of materials and colours, the authenticity of old stones and the subtle nuances of the light of Provence cast their spell on you, for a sojourn under the mark of simplicity and good taste..

Le Castellas can provide a meeting room which can seat around 15 to 20 people, and 17 guest rooms. For this meeting room, we can provide: television, videocassette recorder, paperboard, projector screen, projector, and camcorder. Any other device available on request. Seminars may last one day, with attendants staying at the hotel or just having lunch or dinner. You will be equally captivated by the quality of our menu, whatever the arrangement you may choose.

A sunny cuisine, rich in colour, awaits you at the table of Le Castellas. Our chef, skilfully blends local specialities and the products of the land with the delicious scents of the Garrigue: loin of lamb, young pigeon des Cévennes, roasted red mullet aux Costières de Nîmes, apple soufflé Reinette, and many other marvels to enchant your palate.

This cuisine owes its character to the fresh fruits and vegetables of Provence, without forgetting the aromatic herbs like basil, rosemary, thyme or the incomparable flavour of olive oil.

Mr. Sauron, our wine steward, will help you discover his favourites as well as his further selection of wines. Our region is known for the exceptional quality of its vineyards, and you will taste with pleasure the fullness of a Condrieu, the poise of a Chateauneuf du Pape or the subtlety of a Crozes Hermitage..
